Brightwood’s chef is creative, innovative and never fails to deliver on the favorites. Currently, we offer two beautiful dining spaces. Our formal dining room offers an exquisite dining experience in a lovely atmosphere. On warm days, opt to dine al fresco on our lovely patio area. For a more casual experience or pre dinner cocktails, head over to our lovely Grille. Opening 2020: We are excited to report that a beautiful new bistro, with outdoor seating and open all day will be coming soon!

Dinner is served Monday through Saturday. Lunch is served Wednesday and Friday, and Sunday we serve brunch. Room service is available daily.

Executive Chef

Ed Koprowicz

While Brightwood’s award winning chef has enjoyed national acclaim and has cooked for some of the most prominent men and women in the country, his beginnings were humble. His career began when he was just fourteen years old and was hired as a dishwasher. Starting from the bottom up has given him an appreciation for every member of his team, and he runs his kitchen with respect and an open mindedness that is refreshing and inspirational.

Chef Ed is a master at regional cuisine and enjoys combining flavors and blending culinary worlds to create something completely new. He loves using local favorites and claims Maryland crabs are the best in the world! He was drawn to his position as Executive Chef of Brightwood Club because it offered him complete creative freedom. He enjoys working with the residents and interpreting their thoughts and ideas for his latest menu.

When asked what drew him to a career in the culinary arts chef smiled and said, “It was a great way to meet girls!” It worked. Chef’s future wife couldn’t resist his romantic dinners. The two have been together for over 30 years and have raised two extraordinary young men.

This talented young chef is a first generation American and she is blending cultures, flavors, and styles to bring something completely new and fresh to Brightwood residents.

Bukola’s roots hail from Nigeria, so balancing cultures and traditions comes naturally. This Culinary Institute of America graduate knew from an early age that pastry was her passion. Inspired by Food Network stars such as Gale Gand and Jacque Torres, she began experimenting and playing with flavors in her childhood kitchen. Her attention to detail and precision works seamlessly with the artist within and the results are as beautiful as they are delicious.

She was attracted to Brightwood because of the extraordinary creative freedom and leadership she has over her work. That combined with the direct connection she has to the resident’s is why she loves creating for this wonderful community.
